Watermelon & Feta Salad

Watermeloon is refreshing, thirst-quenching, and its cheery red color brightens any barbecue buffet. While it has a high glycemic index (meaning it enters the bloodstream quickly as sugar) it has a low glycemic load (meaning it doesn't contain much sugar per weight). So, for most people, it does not raise blood sugar very high.


You can blunt that glycemic impact even more if you pair watermelon with a source of protein and fat, like full-fat plain Greek yogurt, Icelandic skyr, or feta cheese. Add a dash of fresh mint and you have a delicious treat for the senses. 

Watermelon & Feta Salad

Salad Ingredients:

  • 2 c. cubed, chilled watermelon

  • 1 c.  crumbled feta cheese

  • 1/2 c. sliced red onion

  • 1/4 c. fresh mint

  • dash of red wine or balsamic vinegar (optional)

Watermelon & Yogurt ingredients:

  • cubed, chilled watermelon

  • plain high protein yogurt

  • fresh mint garnish

Whatever version you are making, simply toss the ingredients together and enjoy. The salad is best served cold and is a great accompaniment to any barbecue. Try the yogurt dish for breakfast, a snack, or dessert.
