Salad Niçoise
A Salad Niçoise is a perfect dish when you don't want to slave over a hot stove. It's robust enough to be a meal in itself, plus it's a great source of protein, fiber, and phytonutrients. Chef Gordon Ramsay has called it "the finest summer salad of them all."
Ingredients:
1 can of tuna, drained
8 cherry tomatoes, halved
4 eggs, hardboiled
1/3 c. black olives
1/3 c. green beans, trimmed
butter lettuce (or spring mix)
4-5 nugget potatoes (optional)
sweet red onion (garnish)
sprig of basil (garnish)
French vinaigrette
Steam the beans, boil the potatoes and eggs, then cool. Or, have cooked and cooled eggs, green beans, and potatoes stored in the fridge ready to go. (For a lower-carb salad, leave out the boiled potatoes.) Then, it just takes a few minutes to artfully compose the ingredients on a serving platter or to toss them together in a salad bowl. Drizzle with a French vinaigrette or with olive oil and vinegar. Serves two.
